Today’s breakfast was a low calorie wonder. It was so easy, and so tasty, that I had to share it with you. I made this for one, but it would be super easy to make it for 2 people, just cook twice the amount of ingredients.
What you'll need for 1 serving: 1 bunch baby asparagus (or 5 full sized asparagus spears) trimmed, 1 egg, salt & pepper to taste, a tiny grating of parmesan cheese if desired.
How to make it: I filled my fry pan with about 1 inch - 1 1/2 inches of water and brought it to a simmer. I cracked my egg into the centre of the pan after creating a gentle whirl pool with my slotted spoon. Once the egg whites start turning white, add your asparagus. When the egg is poached to your liking (I like mine with a firm white, but runny yolk) pull out the asparagus & drain on a tea towel quickly. Place asparagus in a bowl or on a plate and top with the poached egg (slightly dry the poached egg with a paper towel before plating up to make sure you don't swamp your dish in water!). Season with S & P and enjoy. Add a fine grating of parmesan cheese now if desired.
I found this kept me full until lunch time and my body certainly appreciated what felt like a luxurious weekday breakfast! For only an extra 72 calories (so 165 calories all up) - add another poached egg!
