I know, having mashed potatoes for breakfast sounds totally weird. But trust me, its damn tasty.
It all started with some leftover mashed potatoes and a hangover. I was craving carby goodness but unfortunately we don’t buy bread anymore. I searched the fridge or freezer in hopes of finding a lone English muffin or hash brown – but alas, I was left wanting. We did, however, have some leftover mashed potatoes from the night before… suddenly an idea began to form. Surely eating mashed potatoes for breakfast was no more horrendous than eating a hash brown? They are both made from potato after all. And who would know? It could just be our little secret…..
Breakfast Mashed Potatoes (with a poached egg & bacon)
What you’ll need:
About ½ cup - 1 cup leftover mash potato (I made mine with chives & sour cream the night before, but you can just add chives in when re-heating if you want),
A couple bacon rashers.
1. Poach your egg to your liking. Then place on a cold plate (to stop the cooking process) and set aside. I poach mine in a frypan with 1 inch of water. That way it becomes a one pan meal!
2. Fry the bacon until crisp (or however you like it). But make sure you fry it in the pan and not in the oven.
3. Place the mashed potato (and chives if desired) in the pan with the leftover bacon fat. Cook until the potato is heated through. I like to make a hole in the mash whilst cooking it and place the egg back in to heat up.
4. Plate up! Devour. Think about how much you dislike red wine hangovers.
