My sister Alisha eats like 4 carrots a day. I wish I could be as healthy as her, but I just don't have that kind of love for carrots.
One day I was majorly craving some roast veggies but I only had a bag of carrots in the fridge. One thing led to another & this yummy side dish was born. Here's how I made them:
Ingredients- carrots chopped into manageable chunks, fresh or dried thyme, honey, olive oil, salt & pepper.
Method: 1. Heat oven to 180 degree s celsius. In a small bowl mix together 1tbsp olive oil & 1 tbsp honey. 2. Lay the carrots on a baking tray and drizzle olive oil mixture on top. Season with salt & pepper. 3. Sprinkle the thyme over the carrots and mix the carrots around, making sure they are all coated in the olive oil mixture. 4. Cook in the oven until tender & slightly caramelised. Serve as a side dish or a snack. Sunny xo.
