Turkey isn't a very popular meat here in Australia. They come out at Christmas (but with no where near the popularity of turkey in the US) and occasionally I buy a turkey roast when I am craving it, but that is probably limited to once or twice a year. Which is a shame. Turkey is a great lean meat that is full of flavour & should get the recognition it deserves!
Because I never grew up eating turkey, I never grew up knowing what kind of gravy to make to go with turkey. I pretty much just experimented & came up with something I liked - and here is that recipe:
Ingredients: 1/3 cup cranberry sauce, 2 teaspoons gravy mix, 1 tablespoon butter, pan juices, Stock or dry red/white wine.
Method: Combine all ingredients in a small pan & simmer until the cranberry sauce and gravy powder have melted into the rest of the ingredients. Give it a good stir & pour over your roast.
