Cheat's Mini Bruschetta
I have been serving this appetiser for the past 4 years or so & it is a true hostess' dream! It is easy to put together at the last minute & tastes awesome.
What You'll Need: A punnet of cherry tomatoes (you can use full size, just make sure they have flavour!), mini toasts, garlic & herb cream cheese (I use Philadelphia), balsamic vinegar, either fresh chopped basil or basil paste & salt + pepper.
1. Cut tomatoes in half & squeeze out the seeds & liquidy innards. Finely chop & place in a bowl.
2. Add a dash of balsamic & a tablespoon of finely chopped basil (or a squeeze of the basil paste). Salt & pepper the tomatoes. Mix well and taste, adding more balsamic or basil where needed. Cling wrap bowl & place in fridge overnight (you can use the mix straight away if you don't have the time to let it sit).
3. Just before serving lay out your mini toasts on your platter. Spread some cream cheese over each piece then top with a teaspoon of tomato mixture.
These are AWESOME for summer because they are so refreshing & don't give you onion breath like real bruschetta. It's a really cheap appetiser to make so give it a try! Sunny xx
