Homemade Granola



Recently I have been experimenting with new weekday breakfast ideas. This week it was homemade granola because, seriously, no one has ever said “For breakfast I had granola” and not been considered completely & freakishly healthy. So I totally wanted to get in on that action.

Here is how I made mine:

Ingredients – 2 cups oats (not instant), ¾ cup chopped walnuts, ¾ cup chopped macadamia nuts, 1/3 cup oil, 1 tsp salt, 1 tsp cinnamon, 1/3 cup maple syrup, 1 tsp vanilla extract & ¼ cup desiccated coconut.

Method – 1. Combine oats, nuts, oil and syrup in a bowl & mix. 2. Add in cinnamon, salt & vanilla, mix well until all combined & evenly distributed. 3. Pour mixture onto a baking sheet covered in grease proof paper (aka baking paper) and bake at 180°C for about 30 minutes. 4. Mix the granola & add your coconut. Cook for another 10 minutes or so, making sure it doesn’t burn.

There you have it folks. Serve your new brag-worthy granola up with some milk or yogurt (I like to add a dash of golden syrup because sugar is delicious) and gobble it down before heading for a big day of work or play. Also, as an added bonus, your house will smell like your baking cookies thanks to the vanilla & cinnamon! Sunny xx
